This weekend was tiring, but still a good one.
Friday after work, we went out to lunch and to run a quick errand to Old Navy to pick up the girls some stuff for their Easter dresses, but it was a total bust and they were out of everything. We have been working on standing, walking with the walker and walking on their own with the girls daily and it is paying off. The girls are on the move and will be walking on their own any day now. I am not sure if I am ready for it, but who is? We spent Friday afternoon working on this and waiting for the storm to roll in.

That evening my in-laws came over to watch the girls so we could have a date night. We went to Midtown Eats and enjoyed some gourmet burgers and beer battered cauliflower. It was really good and totally hit the spot. Even with my tiny stomach (haven't been able to eat huge portions since surgery), I devoured a little over half of my burger. Then we walked over to their sister bar (Death and Taxes) for a drink. I had a glass of wine and Rory had this yummy drink that was a play off an old fashion. This was my first glass of anything since prior to my surgery. I waited to take my pain meds til way after we had that one drink.
Saturday we went to breakfast and went to Target. We bought a lot of stuff to decorate for Easter (hello dollar section), things for the girls Easter baskets, some household things we needed and some groceries. I tried on the gladiator sandals that everyone has been posting about and I loved the way they looked, but they were really uncomfortable. The straps dug into my feet on certain parts. I was super bummed because I wanted to buy them for Mexico.
I went grocery shopping so we could have dinner at home that evening and brace for the big storm. It rained Friday, but the bulk of the storm was supposed to hit Saturday through Monday morning. It finally started raining again Friday night while Rory was at the last Nevada Wolf Pack basketball home game. I was watching the first episode of The Family and the first episode of season 4 of House of Cards. I think I am going to like The Family. Seems twisted. I didn't watch Sunday night's episode yet, but the first did keep my attention. What did you think?

Sunday we headed out to breakfast again and home to hang out. This is where my weekend got a bit stir crazy. I think I overdid it Saturday, so I wanted to take it easy Sunday. So we stayed in all day. We built a fire and hung out with the girls. Sutton had a really good day, but Avery wouldn't nap, so this caused her to have a major meltdown. I am talking wouldn't sleep, screaming, would almost fall asleep in my arms (and did for about 10 minutes), wouldn't eat her snack or dinner and cried most of her bath time. Avery loves bath time, so it was a brutal day. I played on the ground with the girls all day and it kicked my booty. But I did manage to bake the girls the Whole Wheat Strawberry Banana Muffins and I plan on making the zucchini and banana muffins later this week or this weekend.

I made a baked spaghetti last night for dinner that several bloggers recommended and we didn't like it. I was so bummed because I used my favorite (and expensive) spaghetti sauce in it. I would have rather made a quick spaghetti out of it. I think it tasted too cheesy (how is that even possible?) and lost all the spaghetti sauce flavor. Rory brought some for leftovers, but I just couldn't. I was so bummed. Don't you hate it when you are super excited to make a new recipe and it isn't good and lets you down? So bummed. But we had some gelato to make up for it.
Avery went down ok, but it took her forever to go to sleep. I guess she was just way too overtired (plus molar teething) and kept waking up through the night. It was a rough night after a rough day. Hoping today is a little better.
And this big storm that was supposed to hit? Well we got some rain, but not much and the mountains got about a foot to two feet when they were calling for 4 plus feet of snow and around 4 to 6 inches in the valley. Whomp whomp.

1 ¼ c whole wheat flour (measured correctly)
2 tsp baking powder
1 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
1 tbsp coconut oil or butter, melted and cooled
1 large egg
2 tsp vanilla extract
½ c mashed banana (about 1 medium)
2 tbsp honey
¼ c plain nonfat Greek yogurt
¾ c strawberries, diced (about 10-11)
Preheat the oven to 325°F, and lightly coat 8 muffin cups with nonstick cooking spray.
In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the coconut oil or butter, egg, and vanilla. Stir in the mashed banana, honey, and yogurt, mixing thoroughly until no large lumps of yogurt remain. Add in the flour mixture, stirring just until incorporated. Fold in the strawberries.
Divide the batter between the prepared muffin cups. Baked at 325°F for 22-24 minutes, or until barely firm to the touch and a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes before turning out onto a wire rack.
Note: Fresh or frozen strawberries will both work. If using frozen, let them thaw for only a few minutes on the countertop—just until it’s easy to slice through them to dice. Also, add an extra 2 minutes to the bake time for frozen strawberries (about 24-26 minutes).
Sounds like y'all kept busy this weekend! And it sounds like you're getting around pretty well! You are going to be back at 100% before you know it! And I'm FINALLY going to try to head to Target this week for some Easter decor... I swear, by the time I get it up it'll be time to take it down!

I am finally able to get around a bit more. Still can't pick the girls up, but I let them climb on me when I sit on the floor with them. Sneezing and laughing are still awful. So much pain. haha. There was still a ton of Easter stuff and I got 25% off with my cartwheel app so that made it even better. I still need to get Easter baskets for my girls. Totally failing.

It was a lot of fun. And yes! They had a light beer battered tempura on the roasted cauliflower. Then you squeeze a bit of lemon on it and it was amazing. It was on a bed of arugula for some peppery flavor. So good.

ReplyDeleteThank you!! I am intrigued with the boy. So many questions and I think it will be good. Rory didn't want to watch it because of the initial storyline of child goes missing and is found. But now it seems a bit twisted. So I think I have him hooked in for the second episode.
