Recipe: Stuffed Shells

I have written about this recipe many times, but I don't think I have actually ever posted the recipe. This is a favorite of my husbands. He requests it all the time. And last week, I made it and actually photographed it. Enjoy.
Stuffed Shells

What You Need:

1 lb lean ground beef
1 box jumbo shells
1/4 cup parmesan cheese
1/3 cup pasta cooking water
1 egg
2 cups mozzarella cheese
24 oz marinara sauce (I use Rao's since it is my favorite)
seasonings (I use pepper, garlic salt/powder, onion powder)
9 x 13 inch pan (I use disposable pans)

Stuffed Shells

Directions:

1. Preheat your oven to 350 degrees.

2. Cook your shells according to the package. Cook them to the pre-bake time. Before you drain the pasta, reserve 1/3 cup of the pasta water.

3. Cook your ground beef until it is no longer pink. Drain the fat and stir in your seasonings. I just eyeball it.

4. Stir in the reserved pasta water, parmesan cheese, the egg and 1 cup of mozzarella cheese. Mix until combined.

5. Pour some of the marinara sauce into the bottom of your pan, so you have a thin layer of marinara sauce. I usually make more than 1 pound of ground beef, so we have leftovers, so I usually have 1 1/2 to 2 pans.

6. Take your cooked shells and spoon in the beef and cheese mixture and place in your pan. Make sure to keep your shells upright. After you filled your shells and used all of your meat mixture, spoon on the leftover marinara sauce on top of the shells. Then add mozzarella on top of the marinara sauce.

7. Cover your pans loosely with aluminum foil and baked your filled shells for 30 minutes or until the cheese is melted and your shells are warmed through. Remove the foil and broil for a few minutes until cheese is golden. Make sure to watch your shells.
